Fancy Mountain Food
I won’t lie - most of the food we ate during our trip to Banff consisted of turkey sandwiches and granola bars, but for our first night in town, we decided to go bougie and dine at The Sensory Restaurant.
Granted, this meal was almost a year ago, but I still remember what we ate!
We had their pre-fixe menu (I had the pescatarian version and Mike had the meat one). We both started with compressed watermelon topped with sesame and oils followed by a deconstructed fry bread with sun-dried tomatoes pesto frisée. Mike then had a play on beef pot pie with corn puff pastry corn and a pea fondue. I had “fish and chips” with seared salmon on top of a bed of mashed potatoes with crispy fish skin. For dessert, we shared “Blackberry Five Ways” — fresh, sorbet, merengue, ice cream, and freeze-dried. I think dessert was our favorite!
